Proposal for the production of Pleurotus Ostreatus (Orellana) fungi using as a substrate some agricultural by-products from the municipality of Yacopí-Cundinamarca.

Abstract

El hongo Pleurotus Ostreatus supone un alimento con grandes aportes nutricionales, medicinales y también representa una alternativa para la mitigación del consumo de proteína animal. Con mención a lo anterior se llevó a cabo una investigación sobre un estudio de factibilidad de un emprendimiento de este hongo, siendo el municipio de Yacopí, departamento de Cundinamarca, lugar de referencia del cultivo para este proyecto, aprovechando la gran cantidad de sustratos de cosechas de otros productos tales como el bagazo de caña y la cáscara de cacao. Se logró evidenciar que la economía del municipio se basa en los cultivos, no obstante, en muchas ocasiones no tiene el reconocimiento necesario su ardua labor, por tal motivo se pretende ser una fuente generadora de empleo en el municipio, el cual, años anteriores fue afectado por la violencia de fuerzas armadas.

The Pleurotus Ostreatus mushroom is a food with great nutritional and medicinal contributions, also represents an alternative for mitigating the consumption of animal protein. With reference to the above, an investigation was carried out on a feasibility study of an undertaking of this fungus, with the municipality of Yacopí, department of Cundinamarca, being a reference place for cultivation for this project, taking advantage of the large amount of crop substrates of other products such as cane bagasse and cocoa shell. It was possible to show that the municipality's economy is based on crops, however, on many occasions their hard work does not have the necessary recognition, for this reason it is intended to be a source of employment generation in the municipality, which, in previous years, was affected by violence by armed forces.
